A warm and comforting cream of chicken soup that serves as a versatile base for many dishes or can be enjoyed on its own.

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 rib celery, diced
  • 1 carrot, diced
  • 2 cups chicken broth
  • 1 cup milk
  • 1 cup shredded cooked chicken
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Sauté the vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, celery, and carrot. Cook for about 5 minutes, until the vegetables are softened but not browned.
  2. Add chicken broth and seasoning: Pour in the chicken broth and season with salt, pepper, and garlic powder. Bring the mixture to a gentle boil.
  3. Stir in chicken and milk: Reduce the heat to medium-low. Add the shredded chicken and milk, stirring well to combine. Let the soup simmer for 10 minutes, allowing the flavors to meld.
  4. Adjust seasoning: Taste the soup and adjust the seasoning as needed. If you prefer a creamier texture, you can blend a portion of the soup and stir it back in.
  5. Serve: Ladle the soup into bowls, garnishing with fresh parsley if desired. Enjoy warm with your favorite bread or crackers.
