Spinach and Cream Cheese Stuffed Chicken Breasts

A delightful dish combining tender chicken with a creamy, cheesy spinach filling, perfect for weeknight dinners or special occasions.

Ingredients

  • 4 chicken breasts
  • 1 cup fresh spinach, chopped
  • 1 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the softened cream cheese, chopped spinach, mozzarella, grated Parmesan, minced garlic, salt, and pepper in a mixing bowl. Mix until well-blended.
  3. Cut a pocket in each chicken breast without slicing all the way through. Generously stuff each pocket with the spinach mixture.
  4. Heat olive oil in a large skillet over medium-high heat. Sear each stuffed chicken breast for about 4-5 minutes on each side until golden brown.
  5. Transfer the seared chicken breasts to a baking dish and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  6. Allow the chicken to rest for a few minutes before slicing and serving.

Notes

Choose fresh, high-quality chicken for the best flavor. Avoid overfilling the pockets to prevent the filling from spilling out during cooking.
