A delightful dish combining the bright flavors of ripe tomatoes with fragrant basil and a creamy sauce, ready in under 30 minutes.

Ingredients

  • 8 oz Pasta (your favorite variety such as spaghetti, penne, or fusilli)
  • 2 tbsp Olive Oil
  • 3 cloves Garlic (minced)
  • 2 cups Cherry Tomatoes (halved)
  • 1 cup Heavy Cream
  • 1 cup Fresh Basil (chopped)
  • 1/2 cup Parmesan Cheese (grated)
  • Salt and Black Pepper (to taste)

Instructions

  1. Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
  2. Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant but not browned.
  3. Add Tomatoes: Stir in the cherry tomatoes and season with salt and pepper. Cook for 5-7 minutes, until the tomatoes soften and begin to release their juices.
  4. Make the Sauce: Reduce the heat to low, then pour in the heavy cream. Stir to combine, allowing the sauce to gently simmer for about 3-4 minutes.
  5. Combine Pasta and Sauce: Add the drained pasta to the skillet. Toss to combine, adding reserved pasta water as needed until the sauce reaches your desired consistency.
  6. Finish with Basil and Cheese: Stir in the chopped basil and grated Parmesan cheese. Mix well until everything is evenly coated. Taste and adjust seasoning if necessary.
