A comforting bowl of Chicken and Dumplings that combines tender chicken, hearty vegetables, and fluffy dumplings in a rich broth, perfect for a family meal.

Ingredients

  • 1 pound boneless, skinless chicken breast
  • 4 cups chicken broth
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
  • Salt and pepper to taste
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup buttermilk (or milk with 1 tablespoon vinegar as a substitute)
  • 4 tablespoons butter, melted

Instructions

  1. In a large pot, add the chicken, chopped carrots, celery, onion, garlic, thyme, and chicken broth. Season with salt and pepper.
  2. Bring the mixture to a boil over medium-high heat. Reduce to a simmer, cover, and let cook for 20-25 minutes, or until the chicken is fully cooked.
  3. Remove the chicken from the pot and let it cool slightly. Once cool enough to handle, shred the chicken and return it to the pot.
  4. In a mixing bowl, combine flour, baking powder, and salt. Stir in the buttermilk and melted butter until just combined.
  5. Drop spoonfuls of the dumpling batter into the simmering broth. Cover the pot and let them steam for 10-12 minutes without lifting the lid.
  6. Remove the pot from heat and allow to cool slightly before serving.

Notes

Don’t overmix the dumpling batter for the best texture. You can add extra herbs for flavor.
