Deliciously satisfying chimichangas filled with flavorful ground beef, creamy cheese, and warm spices, all wrapped in a crispy tortilla.

Ingredients

  • 1 lb ground beef
  • 1/2 cup onion, chopped
  • 1 cup refried beans
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 8 flour tortillas
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • Oil for frying
  • Sour cream (for serving)
  • Salsa (for serving)

Instructions

  1. Cook the ground beef and onions in a skillet over medium heat until browned; drain excess fat.
  2. Mix in the refried beans, chili powder, and garlic powder until combined and heated through.
  3. Prepare the tortillas by laying them flat; spoon the beef mixture and shredded cheese onto each.
  4. Roll the tortillas tightly, folding in the sides to secure the filling.
  5. Fry the chimichangas in hot oil over medium-high heat until golden brown, about 3–4 minutes.
  6. Drain on paper towels and serve hot with sour cream and salsa.

Notes

For extra crunch, let fried chimichangas sit for a minute after draining. Ensure oil is hot to avoid greasy chimichangas.
