Ingredients

  • 4 boneless skinless chicken thighs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 2 cups mushrooms, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth
  • 1 tablespoon parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat olive oil in a large oven-safe skillet over medium heat until shimmering.
  3. Season the chicken thighs with salt, black pepper, and thyme.
  4. Brown the chicken thighs in the skillet until browned, about 5 minutes on each side.
  5. Set the browned chicken aside.
  6. Sauté the sliced mushrooms and minced garlic in the same skillet until tender, about 3-4 minutes.
  7. Combine the chicken back in the skillet and pour in the chicken broth, bringing to a gentle simmer.
