A flavorful and easy-to-prepare Middle Eastern dish with tender, marinated chicken and aromatic spices, perfect for weeknight dinners or special gatherings.

Ingredients

  • 4 chicken thighs or breasts
  • 3 tablespoons olive oil
  • 2 tablespoons yogurt (Greek or plain)
  • 2 tablespoons lemon juice
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Prepare the Marinade: In a large mixing bowl, combine the olive oil, yogurt, lemon juice, garlic, cumin, coriander, paprika, turmeric, cinnamon, salt, and pepper. Whisk until well blended.
  2. Marinate the Chicken: Add the chicken to the marinade, ensuring each piece is thoroughly coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably overnight for optimal flavor.
  3. Preheat the Oven: Preheat your oven to 400°F (200°C) to prepare for baking the chicken.
  4. Arrange on Baking Sheet: Line a baking sheet with parchment paper. Place the marinated chicken pieces on the sheet, spaced evenly apart.
  5. Bake the Chicken: Place the baking sheet in the preheated oven and bake the chicken for 25-30 minutes, or until the chicken is cooked through and golden brown. Look for an internal temperature of 165°F (75°C).
  6. Rest and Slice: Once cooked, let the chicken rest for a few minutes before slicing it into strips or chunks.
  7. Serve and Garnish: Serve the sliced chicken with pita bread, fresh veggies, and any sauces you like. Garnish with chopped fresh parsley for a vibrant touch.

Notes

For enhanced flavor, marinate the chicken overnight. Check doneness with a meat thermometer to avoid drying it out.
