This creamy and flavorful chicken noodle soup combines tender shredded chicken, cheese, and egg noodles for a comforting dish that’s perfect for any day of the week.

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 cups egg noodles
  • 1 cup cream cheese
  • 1 cup shredded cheddar cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Boil the chicken: In a large pot, add the chicken breasts, chicken broth, chopped onion, minced garlic, garlic powder, onion powder, salt, and pepper. Bring the mixture to a boil, then reduce to a simmer. Cook for 20-30 minutes or until the chicken is fully cooked.
  2. Shred the chicken: Remove the chicken from the pot and use two forks to shred it into bite-sized pieces.
  3. Create the creamy base: Return the shredded chicken to the pot. Add the egg noodles and cream cheese, stirring until the cream cheese melts and blends smoothly into the broth.
  4. Melt the cheddar: Stir in the shredded cheddar cheese until it melts and combines with the soup, adding extra creaminess.
  5. Cook the noodles: Let the mixture simmer for an additional 10 minutes, until the egg noodles are cooked through and have absorbed some of the flavors.
  6. Serve hot: Ladle the soup into bowls and garnish with chopped green onions before serving.

Notes

Using fresh ingredients enhances the flavor, but feel free to substitute frozen vegetables or rotisserie chicken for a quicker option.
