A classic Italian risotto that is creamy, comforting, and easy to customize for any occasion.

Ingredients

  • 1 cup Arborio rice
  • 4 cups chicken or vegetable broth
  • 1 cup dry white wine
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 cup freshly grated Parmesan cheese
  • A pinch of saffron (optional)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare the broth: In a pot, heat the broth over low heat to keep it warm.
  2. Sauté the aromatics: In a large skillet, heat the olive oil over medium heat and add the chopped onion and garlic, cooking until softened, about 3-4 minutes.
  3. Toast the rice: Stir in the Arborio rice, cooking for 1-2 minutes until translucent and coated in oil.
  4. Add wine: Pour in the dry white wine, stirring until mostly evaporated.
  5. Incorporate broth gradually: Add warm broth one ladle at a time, stirring continuously for about 18-20 minutes.
  6. Check texture: The risotto should be creamy and al dente when ready; taste and adjust seasoning if necessary.
  7. Finish with cheese: Stir in Parmesan cheese and saffron (if using), seasoning with salt and pepper.
  8. Serve: Serve hot, garnished with fresh parsley if desired.
