Caprese Stuffed Chicken

A delightful dish that combines juicy chicken breasts stuffed with fresh mozzarella, cherry tomatoes, and fragrant basil, baked to perfection.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh mozzarella cheese, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons balsamic glaze
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C), ensuring it’s hot and ready for the chicken.
  2. In a medium bowl, combine the diced mozzarella, halved cherry tomatoes, chopped basil, and balsamic glaze. Stir until well mixed.
  3. Using a sharp knife, cut a pocket into each chicken breast. Take care not to cut through the other side. Stuff each chicken breast generously with the mozzarella mixture.
  4. Season the outside of the chicken breasts with salt and pepper to enhance flavor.
  5. Heat olive oil in a large skillet over medium-high heat. Once hot, add the stuffed chicken breasts. Sear for about 3-4 minutes on each side, until golden brown.
  6. Transfer the seared chicken breasts to a baking dish. Bake for 25-30 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F/75°C).
  7. Serve hot, drizzled with any leftover balsamic glaze for an extra touch of flavor.

Notes

Opt for fresh mozzarella for the best flavor. You can substitute grape tomatoes for cherry tomatoes if needed. Store-bought balsamic glaze works well, or make your own by reducing balsamic vinegar.
