A comforting Chicken Marsala Pasta dish that combines flavorful chicken, tender mushrooms, and a creamy Marsala sauce, perfect for family dinners or quick weeknight meals.

Ingredients

  • 8 oz. fettuccine or penne pasta
  • 2 tablespoons olive oil
  • 1 lb. boneless, skinless chicken breasts, sliced
  • 1 cup sliced mushrooms (preferably cremini or button)
  • 2 cloves garlic, minced
  • 1/2 cup Marsala wine
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional, for serving)

Instructions

  1. Boil the pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  2. Cook the chicken: In a large skillet, heat olive oil over medium-high heat. Add the sliced chicken, seasoning with salt and pepper. Cook for about 5-7 minutes, until the chicken is golden brown and cooked through. Remove from skillet and set aside.
  3. Sauté the mushrooms: In the same skillet, add the sliced mushrooms. Sauté for about 3-4 minutes until browned and tender.
  4. Add garlic: Stir in the minced garlic and cook for another minute until fragrant.
  5. Deglaze with Marsala: Pour Marsala wine into the skillet, scraping up any brown bits from the bottom. Let simmer for about 2 minutes to reduce slightly.
  6. Incorporate broth and cream: Stir in chicken broth, heavy cream, and Italian seasoning. Allow to simmer for another 3-4 minutes, thickening slightly.
  7. Return chicken and combine: Add the cooked chicken back into the skillet. If the sauce is too thick, stir in reserved pasta water until desired consistency is reached.
  8. Toss with pasta: Add the cooked pasta to the skillet and toss everything together to combine. Cook for an additional minute or two to heat through.
  9. Season to taste: Taste the dish and adjust seasoning with salt and pepper as needed.
  10. Serve: Remove from heat and garnish with chopped parsley and Parmesan cheese, if desired. Serve immediately.

Notes

Use whichever pasta you prefer; Marsala wine adds unique flavor but can be substituted with another fortified wine or balsamic vinegar.
