A delightful one-skillet dish featuring tender seared chicken atop creamy garlic parmesan rice, perfect for weeknights or special occasions.

Ingredients

  • 2 chicken breasts, seared
  • 2 tablespoons olive oil
  • 1 cup rice (long-grain or Arborio)
  • 2 cups chicken broth
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon Italian herbs
  • Salt and pepper to taste
  • Parsley (for garnishing)

Instructions

  1. Sear the chicken: Heat the olive oil over medium heat and sear the chicken until cooked through and golden, about 6-7 minutes per side. Remove and set aside.
  2. Sauté the garlic: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
  3. Cook the rice: Add the rice to the skillet, stirring to coat it in garlic and oil. Toast for 1-2 minutes.
  4. Add broth: Pour in the chicken broth, bring to a boil, cover, and simmer for about 15 minutes until rice is tender.
  5. Make it creamy: Stir in the heavy cream and parmesan cheese, mixing until combined and creamy. Adjust seasonings with salt and pepper if needed.
  6. Slice the chicken: While the rice finishes, slice the chicken. Place on top of the creamy rice to serve.
  7. Garnish and serve: Sprinkle with Italian herbs and fresh parsley before serving.

Notes

Ensure chicken is cooked to an internal temperature of 165°F. Adjust cream and parmesan quantity based on desired richness.
