Delightful dish with tender, breaded chicken and a savory Romano cheese crust, perfect for weeknight dinners.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup grated Romano cheese
  • 1 cup breadcrumbs (preferably Italian-style)
  • 2 large eggs
  • 2 tablespoons all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup olive oil
  • Fresh parsley, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Place the chicken breasts between two pieces of plastic wrap. Gently pound them to an even thickness of about 1/2 inch.
  3. In three separate shallow bowls, place the flour, beaten eggs, and a mixture of breadcrumbs, grated Romano cheese, garlic powder, oregano, salt, and pepper.
  4. Dredge each chicken breast in flour, shaking off the excess. Next, dip it into the egg, allowing any excess to drip off. Finally, coat it with the breadcrumb and cheese mixture.
  5. Heat olive oil in a large skillet over medium heat. Cook the breaded chicken breasts for about 3-4 minutes on each side until golden brown.
  6. Transfer the browned chicken breasts to the prepared baking sheet. Bake in the oven for 15-20 minutes or until the internal temperature reaches 165°F (74°C).
  7. Remove from the oven and let the chicken rest for a few minutes. Garnish with fresh parsley, if desired.
