Creamy Chipotle Chicken

A delicious and satisfying dish with smoky, spicy, and creamy flavors—perfect for weeknight dinners or impressing guests.

Ingredients

  • 4 teaspoons extra-virgin olive oil (divided)
  • 4 (5-6 oz.) boneless, skinless chicken breasts
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 3 chipotle peppers, minced (adjust to taste)
  • 1 tablespoon adobo sauce (from the chipotle can)
  • 1/2 cup low-sodium chicken broth
  • 4 oz. 1/3 less fat cream cheese
  • 2 to 3 tablespoons plain non-fat Greek yogurt (or sour cream)

Instructions

  1. Heat 2 teaspoons of olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper. Add them to the pan and sear for 4 minutes on each side, until they are golden brown. Remove the chicken from the skillet and cover with aluminum foil to keep warm.
  2. Reduce the heat to medium and add the remaining 2 teaspoons of olive oil to the pan. Add the diced onion and sauté for 4-5 minutes until softened. Add the minced garlic and chipotle peppers, cooking for an additional 30 seconds until fragrant.
  3. Add the adobo sauce, chicken broth, and cream cheese to the pan. Stir until the cream cheese has melted and the sauce is creamy and well combined.
  4. Return the seared chicken breasts to the skillet along with any accumulated juices. Turn the chicken to coat in the sauce. Cover the pan, reduce the heat to medium-low, and cook for 7-9 minutes, or until the chicken is cooked through (the internal temperature should reach 165°F).
  5. Once the chicken is cooked through, turn off the heat and stir in the Greek yogurt. Taste and season with additional salt and pepper if necessary. Serve with extra sauce spooned over the top, and enjoy!

Notes

For best results, do not overcook the chicken. Use fresh ingredients for maximum flavor.
