A comforting dish that combines tender chicken, a creamy broth, and subtly spiced flavors, ideal for a family dinner.

Ingredients

  • 1 lb cooked chicken (shredded or diced)
  • 2 cans (15 oz each) white beans (such as Great Northern or cannellini), drained and rinsed
  • 4 cups chicken broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 (4 oz) can diced green chilies
  • 1 cup sour cream or Greek yogurt
  • 1 cup heavy cream or milk
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder
  • Salt and pepper to taste
  • Optional garnishes: Chopped cilantro, avocado slices, or shredded cheese

Instructions

  1. Sauté vegetables: In a large pot, heat a splash of oil over medium heat. Add the diced onion and cook for about 5 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.
  2. Add chicken and beans: Stir in the cooked chicken, drained beans, chicken broth, and diced green chilies. Mix well to combine and bring the mixture to a gentle boil.
  3. Season the chili: Add the ground cumin, chili powder, salt, and pepper. Reduce the heat to low and let it simmer for about 15 minutes.
  4. Incorporate cream: Slowly stir in the sour cream and heavy cream, mixing until fully incorporated. Heat through for an additional 5 minutes.
  5. Taste and adjust: Taste your chili and adjust seasoning if necessary.
  6. Serve: Ladle the chili into bowls and sprinkle over your choice of garnishes.

Notes

For quicker preparation, use rotisserie chicken. Adjust spice levels according to preference.
