A comforting twist on traditional cheesesteak flavors, combining tender steak, vibrant veggies, and cheesy tortellini into a satisfying one-pot meal.

Ingredients

  • 1 pound beef steak, sliced thin
  • 1 cup bell peppers, sliced
  • 1 cup onions, sliced
  • 1 cup mushrooms, sliced
  • 1 package (9 oz) cheese tortellini
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup beef broth
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Layer the ingredients: In the crock pot, layer the sliced beef, bell peppers, onions, and mushrooms.
  2. Prepare the sauce: In a separate bowl, mix the cream of mushroom soup and beef broth. Pour this mixture over the contents in the crock pot.
  3. Set the cooker: Cook on low for 6-8 hours or on high for 3-4 hours. The beef should be tender and cooked through.
  4. Add the tortellini: About 30 minutes before serving, add the cheese tortellini and stir to combine.
  5. Cheese it up: In the last 10 minutes of cooking, sprinkle the shredded mozzarella cheese on top and let it melt.
  6. Serve warm: Dish out the tortellini while it’s warm and enjoy!
