A warm and comforting soup made effortlessly in a slow cooker with chicken, rice, and vegetables, perfect for chilly days.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup rice, uncooked
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Combine the chicken, rice, chicken broth, carrots, celery, onion, garlic, thyme, salt, and pepper in a slow cooker.
  2. Stir well to ensure all ingredients are evenly distributed.
  3. Cover the slow cooker and cook on low for 6 to 8 hours, or until the vegetables are tender and the rice is cooked through.
  4. Serve hot, garnished with fresh herbs if desired.

Notes

Don’t overcook the rice. Use shredded rotisserie chicken for convenience. Adjust soup consistency with additional broth if necessary.
