A comforting and nutritious soup made with tender chicken, brown rice, and hearty vegetables, perfect for busy weeknights.

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup brown rice
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups fresh spinach (optional)

Instructions

  1. Layer the chicken: Place the chicken breasts at the bottom of the Crock Pot.
  2. Add the grains and veggies: Pour in the brown rice, followed by the chopped onion, diced carrots, and diced celery.
  3. Mix in the liquids and seasonings: Add the chicken broth, garlic powder, dried thyme, salt, and pepper. Stir to combine all ingredients.
  4. Cook period: Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through and the rice is tender.
  5. Shred the chicken: Remove the chicken from the pot, shred it with two forks, and return it to the soup.
  6. Add spinach: If using, stir in the fresh spinach and let it wilt for a few minutes before serving.
