Ingredients

  • 4 chicken breasts (boneless, skinless)
  • 2 pounds baby potatoes (halved or quartered)
  • 1/2 cup unsalted butter (melted)
  • 4 cloves garlic (minced)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley (optional, for garnish)

Instructions

  1. Prep the potatoes: Place the baby potatoes at the bottom of the slow cooker.
  2. Make the garlic butter mixture: In a bowl, combine the melted butter, minced garlic, dried thyme, dried rosemary, salt, and pepper. Mix well.
  3. Combine ingredients: Pour the garlic butter mixture evenly over the chicken breasts and potatoes in the slow cooker.
  4. Set the slow cooker: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through.
  5. Garnish and serve: Before serving, garnish with fresh parsley and enjoy your meal!

Notes

Don’t overcrowd the crockpot and use fresh herbs for a brighter flavor. Check the chicken’s doneness for safety.
