Cook the Noodles: Bring a large pot of salted water to a boil. Add lo mein noodles and cook according to package instructions until al dente. Drain, rinse with cold water, and set aside.
Prepare the Chicken: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced chicken and stir-fry until no longer pink, about 5-7 minutes. Remove from the skillet and set aside.
Sauté the Aromatics: Add the remaining tablespoon of oil to the skillet. Add garlic and ginger and sauté for about 30 seconds, until fragrant.
Add the Vegetables: Add bell peppers, snow peas, and carrots to the skillet. Stir-fry for about 3-5 minutes, or until they are tender-crisp.
Combine Everything: Return the cooked chicken to the skillet. Add the cooked noodles, bean sprouts, soy sauce, oyster sauce (if using), sesame oil, and sugar. Mix everything thoroughly, cooking for another 2-3 minutes until heated through.
Adjust and Serve: Taste and season with salt and pepper as needed. Serve immediately for the best texture.
Notes
Don’t overcook the noodles and maintain high heat for the best stir-fry flavor.
