Delicious Chicken Lo Mein

A delightful dish that combines tender chicken, colorful vegetables, and perfectly cooked noodles in a savory sauce.

Ingredients

  • 8 ounces of lo mein noodles (or spaghetti)
  • 2 tablespoons of vegetable oil
  • 1 pound boneless, skinless chicken breast, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 cup bell peppers, sliced (any color)
  • 1 cup snow peas or snap peas
  • 1 cup carrots, julienned
  • 1 cup bean sprouts
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • Salt and pepper, to taste

Instructions

  1. Cook the Noodles: Bring a large pot of salted water to a boil. Add lo mein noodles and cook according to package instructions until al dente. Drain, rinse with cold water, and set aside.
  2. Prepare the Chicken: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced chicken and stir-fry until no longer pink, about 5-7 minutes. Remove from the skillet and set aside.
  3. Sauté the Aromatics: Add the remaining tablespoon of oil to the skillet. Add garlic and ginger and sauté for about 30 seconds, until fragrant.
  4. Add the Vegetables: Add bell peppers, snow peas, and carrots to the skillet. Stir-fry for about 3-5 minutes, or until they are tender-crisp.
  5. Combine Everything: Return the cooked chicken to the skillet. Add the cooked noodles, bean sprouts, soy sauce, oyster sauce (if using), sesame oil, and sugar. Mix everything thoroughly, cooking for another 2-3 minutes until heated through.
  6. Adjust and Serve: Taste and season with salt and pepper as needed. Serve immediately for the best texture.

Notes

Don’t overcook the noodles and maintain high heat for the best stir-fry flavor.
