A comforting and flavorful slow cooker chicken curry that combines spices, creamy coconut milk, and tender chicken, perfect for busy weeknights.

Ingredients

  • 1 lb chicken breasts, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons curry powder
  • 1 can (14 oz) coconut milk
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 cup frozen peas
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Combine Ingredients: In the slow cooker, add the diced chicken, chopped onion, minced garlic, grated ginger, curry powder, coconut milk, diced tomatoes, chicken broth, frozen peas, salt, and pepper.
  2. Mix Well: Stir everything together to ensure the ingredients are evenly distributed.
