A quick and nutritious skillet meal featuring chicken breasts sautéed with vibrant vegetables and seasoned with chili powder.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt, pepper, and chili powder.
  3. Cook the chicken in the skillet for about 6-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F).
  4. Set the cooked chicken aside on a plate.
  5. Sauté the sliced onions and bell peppers in the same skillet for 3-4 minutes until they begin to soften.
  6. Add broccoli florets and a splash of water, cover, and steam for 3-4 minutes until bright green and tender.
  7. Combine the sliced chicken with the vegetables, mixing gently and cooking for an additional minute before serving.
