A comforting bowl of creamy chicken noodle soup made effortlessly in a crockpot, perfect for chilly days.

Ingredients

  • 1 pound chicken breast, boneless and skinless
  • 4 cups chicken broth
  • 1 can cream of chicken soup
  • 1 cup heavy cream
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups egg noodles

Instructions

  1. Combine ingredients: In a crockpot, add the chicken breasts, chicken broth, cream of chicken soup, heavy cream, diced carrots, diced celery, chopped onion, minced garlic, thyme, salt, and pepper.
  2. Mix it up: Stir to thoroughly combine all ingredients.
  3. Set the heat: Cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is fully cooked and tender.
  4. Shred the chicken: Once cooked, remove the chicken from the crockpot. Use two forks to shred the chicken into bite-sized pieces and return it to the pot.
  5. Add the noodles: About 30 minutes before serving, stir in the egg noodles. Cook on high until they are tender.

Notes

For a dairy-free version, substitute heavy cream with coconut milk. Add fresh parsley for garnish before serving.
