A creamy and flavorful chicken dish made effortlessly in a slow cooker, perfect for busy weeknights.

Ingredients

  • 4 pieces chicken breasts (fresh, boneless, skinless)
  • 1 cup chicken broth (low sodium recommended)
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese (grated)
  • 4 cloves garlic (minced)
  • 1 tsp oregano (dried)
  • 1 tsp thyme (dried)
  • 1/2 tsp red pepper flakes (to taste)
  • 1/4 cup sun-dried tomatoes (chopped)
  • 2 tbsp butter (for enriching the sauce)
  • Fresh basil or parsley (for garnish)

Instructions

  1. Prepare the chicken: Pat the chicken breasts dry using paper towels. Season generously with salt and pepper on both sides.
  2. Mix the sauce: In a medium bowl, whisk together the chicken broth, heavy cream, grated Parmesan cheese, minced garlic, oregano, thyme, and red pepper flakes until smooth and combined.
  3. Combine in slow cooker: Place the seasoned chicken breasts in the bottom of your slow cooker. Pour the cream mixture evenly over the top.
  4. Add the tomatoes: Scatter the chopped sun-dried tomatoes over the cream mixture in the slow cooker.
  5. Cook: Cover the slow cooker and set it to cook on LOW for 240-300 minutes or HIGH for 120-180 minutes. The chicken should be tender and easily shredded when done.
  6. Enrich the sauce: About 30 minutes before serving, stir in the butter to enrich and thicken the sauce, enhancing the flavors.
  7. Garnish and serve: Once cooked, sprinkle fresh basil or parsley over the top. Serve warm with your choice of rice, mashed potatoes, pasta, or crusty bread.

Notes

Feel free to use shredded rotisserie chicken for a quicker version, or substitute the heavy cream with a dairy-free alternative if needed.
