A quick and flavorful homemade Tomato Basil Pasta featuring fresh ingredients for a delightful meal.

Ingredients

  • 12 oz pasta (spaghetti, penne, or linguine)
  • 4-5 medium ripe tomatoes, diced
  • 3 cloves garlic, minced
  • 1 cup fresh basil, chopped
  • 3 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Parmesan cheese, for serving (optional)

Instructions

  1. Boil a large pot of salted water. Add the pasta and cook according to package instructions until al dente. Save about 1 cup of pasta water before draining.
  2. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the diced tomatoes to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the tomatoes start to break down.
  4. Add the drained pasta to the skillet, tossing it with the tomato mixture. Gradually add reserved pasta water until desired consistency.
  5. Stir in the chopped basil, salt, and pepper. Cook for an additional 2-3 minutes to combine flavors.
  6. Plate the pasta and top with freshly grated Parmesan cheese if desired. Serve warm.

Notes

Using ripe tomatoes greatly enhances the dish’s flavor. Don’t forget to save the pasta water for the sauce!
