A delightful One Pan Chicken Tikka Masala recipe that combines juicy chicken with a creamy, spiced sauce, perfect for weeknight dinners.

Ingredients

  • 1 pound boneless, skinless chicken thighs or breasts
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons garam masala
  • 1 tablespoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 1 can (14 oz) diced tomatoes
  • 1 cup coconut milk or heavy cream
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a large pan over medium heat. Add chopped onions and cook until softened, about 5 minutes.
  2. Stir in minced garlic and grated ginger, cooking for another minute until fragrant.
  3. Add the chicken pieces to the pan, cooking until they are lightly browned, approximately 5-7 minutes.
  4. Sprinkle in garam masala, coriander, cumin, and turmeric. Stir well to coat the chicken evenly with the spices.
  5. Pour in the diced tomatoes and coconut milk or cream. Bring the mixture to a gentle simmer.
  6. Allow the dish to cook for about 15-20 minutes, or until the chicken is cooked through and the sauce thickens.
  7. Adjust salt and pepper as needed.
  8. Garnish with fresh cilantro and serve warm over rice or with naan.

Notes

Cut chicken into uniform pieces for even cooking. Don’t rush the onion cooking for better flavor development.
