Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup cheese (cheddar or Monterey Jack)
  • 1/2 cup green chilies (canned or fresh, diced)
  • 1 cup sour cream
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 8 large flour tortillas
  • 1 cup enchilada sauce

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C).
  2. Prepare the filling: In a large bowl, mix the shredded chicken, cheese, green chilies, sour cream, cumin, chili powder, salt, and pepper until well combined.
  3. Assemble the burritos: Take one tortilla and place a portion of the chicken mixture down the center. Roll it up tightly, tucking the sides in as you go.
  4. Add sauce: Place the rolled burritos seam-side down in a greased baking dish. Pour the enchilada sauce evenly over the top.
  5. Bake: Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
