Frankenstein Cheesecake Bars are a delightful twist on classic cheesecake, combining different flavors for a unique dessert experience. Perfect for gatherings, these bars are easy to make and customizable.

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup sour cream
  • ½ cup fruit preserves (like raspberry, strawberry, or blueberry)
  • ¼ cup chocolate syrup

Instructions

  1. Preheat your oven to 325°F (163°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press this mixture firmly into the bottom of a greased 9×13 inch baking dish.
  2. In a large mixing bowl, beat the softened cream cheese with a hand mixer or stand mixer until smooth. Gradually add in the sugar, mixing until combined. Then, add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until fully incorporated.
  3. Pour half of the cheesecake mixture over the prepared crust, spreading it evenly. Drizzle half of the fruit preserves and chocolate syrup over the top. Use a knife or skewer to swirl the preserves gently into the cream cheese filling. Repeat with the remaining cheesecake mixture, preserves, and chocolate.
  4. Bake in preheated oven for about 45 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the bars inside for an additional hour to cool gently. This helps prevent cracking.
  5. Refrigerate for at least 4 hours or overnight for best results. Once fully chilled, cut into squares and serve.

Notes

Make sure the cream cheese is soft to avoid lumps in your filling. For cleaner cuts, use a warm knife and wipe it between cuts.
