A comforting dish featuring seared chicken breast with garlic and herbs served over creamy mashed potatoes, topped with a delightful pan sauce.

Ingredients

  • 4 boneless skinless chicken breasts
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons butter
  • 1 cup chicken broth
  • 2 tablespoons brown sugar
  • 1 tablespoon balsamic vinegar
  • 2 pounds russet potatoes
  • ½ cup heavy cream

Instructions

  1. Prepare the chicken: Pat the chicken breasts dry and season with salt and pepper. Rub garlic and herb mixture over the chicken and let it rest for 10 minutes.
  2. Sear the chicken: Heat olive oil in a skillet over medium-high heat and sear the chicken for 5-6 minutes on each side until golden-brown.
  3. Baste the chicken: Add butter to the pan and baste the chicken with melted butter and pan juices. Transfer to a plate when cooked through.
  4. Make the sauce: In the skillet, combine brown sugar and balsamic vinegar, then add chicken broth and simmer for 5-7 minutes until reduced.
  5. Cook the potatoes: Boil peeled and cut potatoes in salted water until fork-tender, about 15-20 minutes. Drain.
  6. Mash the potatoes: Add butter and heavy cream to the drained potatoes and mash until smooth. Season to taste.
  7. Plate and serve: Place mashed potatoes on plates, top with chicken, and drizzle with pan sauce. Garnish with herbs as desired.

Notes

Fresh herbs enhance flavor; use dried herbs in smaller amounts if necessary. Chicken broth can be substituted with vegetable broth.
