A delightful dish that balances juicy chicken and creamy goat cheese, perfect for weeknight dinners or special occasions.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 oz goat cheese, softened
  • 1 cup spinach, chopped
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup breadcrumbs

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine goat cheese, chopped spinach, minced garlic, salt, and pepper in a bowl.
  3. Cut a pocket into each chicken breast and stuff with goat cheese mixture.
  4. Heat olive oil in a skillet over medium heat and sear chicken for 3-4 minutes on each side.
  5. Transfer the chicken to a baking dish, sprinkle breadcrumbs on top, and bake for 20-25 minutes.
  6. Remove from the oven and let it rest before serving warm.

Notes

Be careful not to overstuff the chicken to prevent filling from spilling out during baking.
