Homemade stuffed bell peppers filled with a savory mixture of rice, ground meat, and spices for a nutritious and comforting meal.

Ingredients

  • 4 large bell peppers (any color)
  • 1 pound ground beef (or ground turkey)
  • 1 cup cooked rice (white or brown)
  • 1 can (14.5 ounces) diced tomatoes (with juices)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or mozzarella)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the bell peppers by slicing off the tops and removing the seeds and membranes.
  3. Cook the ground meat in a large skillet over medium heat until browned (about 5-7 minutes). Drain excess fat.
  4. Sauté the onion in the skillet until softened, then add garlic and cook for an additional minute.
  5. Combine cooked rice, diced tomatoes, and Italian seasoning into the skillet. Season with salt and pepper, mixing until heated through.
  6. Stuff the bell peppers with the meat and rice mixture, packing it in gently.
  7. Top with shredded cheese if desired.
  8. Bake covered with foil for 30 minutes, then remove the foil and bake for an additional 5-10 minutes until tender and cheese is melted.
  9. Serve hot after allowing to cool slightly.
