Ingredients

  • 4 chicken breasts
  • 1 cup pineapple juice
  • 1/4 cup honey
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons olive oil
  • 2 cups cooked rice
  • 1 cup coconut milk
  • 1 cup diced fresh pineapple
  • Chopped green onions for garnish

Instructions
