Ingredients

  • 4 pork chops
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • 2 cups potatoes, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Combine honey and Dijon mustard in a bowl until well mixed.
  2. Add the pork chops to the marinade, coating well. Marinate for at least 30 minutes.
  3. Heat olive oil in a large skillet over medium heat until shimmering.
  4. Cook the marinated pork chops for 5-7 minutes on each side until golden brown and cooked through.
  5. Remove the pork chops from the skillet and set aside.
  6. Add diced potatoes, garlic powder, salt, and pepper to the skillet. Cook for 10-15 minutes until tender.
  7. Return the pork chops to the skillet, cover, and heat through for an additional 5 minutes.
  8. Garnish with fresh parsley before serving.
