A comforting and delightful creamy mushroom risotto, perfect for cozy family dinners or impressing guests.

Ingredients

  • 1 cup Arborio Rice
  • 4 cups Chicken or Vegetable Broth
  • 2 cups Mushrooms, sliced
  • 1 small Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1/2 cup Parmesan Cheese, grated
  • 2 tablespoons Butter
  • 1 tablespoon Olive Oil
  • Black Pepper, to taste
  • Salt, to taste
  • Fresh Parsley, for garnish

Instructions

  1. Prepare ingredients: Gather all your ingredients and chop the vegetables.
  2. Sauté aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic. Cook for about 2-3 minutes until the onion becomes translucent.
  3. Cook mushrooms: Add the sliced mushrooms to the pot. Sauté them for about 5-7 minutes, or until they’re browned and tender.
  4. Toast the rice: Add the Arborio rice to the pot. Stir to coat the rice with the oil and mix it with the mushrooms. Cook for about 1-2 minutes until the rice appears slightly translucent.
  5. Add broth gradually: Pour in the broth, one ladle at a time, stirring frequently. Allow the rice to absorb most of the liquid before adding more broth. This will take about 20 minutes.
  6. Finish with cheese and butter: Once the rice is tender and creamy but still has a slight bite, stir in the grated Parmesan cheese and the butter. Season with salt and pepper to taste.
  7. Serve hot: Spoon the risotto into bowls and garnish with fresh parsley. Enjoy it warm.

Stir gently but frequently for a creamy texture. Use warm broth for better results.
