Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tsp ground paprika
  • 1 tsp ground turmeric
  • 1 tsp ground cinnamon
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Pita bread or wraps for serving
  • Fresh vegetables (lettuce, tomatoes, cucumbers)
  • Creamy garlic sauce (Tahini or yogurt-based)

Instructions

  1. Prepare the Marinade: In a bowl, mix together the olive oil, minced garlic, cumin, paprika, turmeric, cinnamon, cayenne, lemon juice, salt, and pepper until well combined.
  2. Marinate the Chicken: Add the chicken thighs to the marinade, ensuring they are well coated. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight for the best flavor.
  3. Preheat Your Grill or Oven: Set your grill or oven to medium-high heat so it’s ready for cooking.
  4. Cook the Chicken: Grill or bake the marinated chicken for about 10-15 minutes on each side, or until the internal temperature reaches 165°F. The chicken should be golden and slightly charred.
  5. Rest and Slice: Remove the chicken from heat and let it rest for a few minutes. Then, slice thinly against the grain for the best texture.
  6. Assemble the Dish: Serve the sliced chicken wrapped in pita bread or in a bowl with fresh vegetables and a generous drizzle of creamy garlic sauce.

Notes

For best flavor, marinate the chicken overnight. Allow to rest before slicing to retain juices.
