A hearty and comforting slow cooker chicken stew made with tender chicken and a medley of vegetables, simmered in a flavor-packed broth. Perfect for busy weeknights or cozy gatherings.

Ingredients

  • 4 chicken thighs or breasts
  • 4 medium potatoes, diced
  • 3 carrots, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Brown the chicken: Heat the olive oil in a large skillet over medium heat. Add the chicken and brown on both sides for about 5 minutes until golden.
  2. Add the ingredients to the slow cooker: Transfer the browned chicken to the slow cooker. Add the diced potatoes, sliced carrots, chopped onion, and minced garlic.
  3. Combine seasoning and broth: Pour in the chicken broth and sprinkle the dried thyme, rosemary, salt, and pepper over the top. Stir everything together gently to mix.
  4. Cook the stew: Cover the slow cooker and set it on low for 6-8 hours, or on high for 3-4 hours. The chicken should be cooked through, and the vegetables should be tender.
  5. Shred and serve: Once cooked, you can shred the chicken in the slow cooker if desired, or leave it whole for serving. Enjoy your meal!

Notes

Chicken: Thighs provide extra moisture and flavor, but breasts can be used for a leaner option. Vegetables: Feel free to swap in seasonal vegetables like zucchini or green beans. Broth: Homemade broth adds depth, but store-bought works perfectly in this recipe.
