A delightful dish that brings the comforting flavors of Japan right to your dinner table, balancing crispy cutlets with fluffy rice.

Ingredients

  • 2 boneless chicken breasts or pork loin cutlets (pounded to ½-inch thickness)
  • 1 cup panko breadcrumbs (for crunch)
  • ½ cup all-purpose flour (for coating)
  • 2 large eggs (beaten, for binding)
  • 3 cups cooked white rice (sushi rice preferred)
  • ½ cup tonkatsu sauce (store-bought or homemade)
  • Oil for frying (vegetable or canola)

Instructions

  1. Prepare the Meat: Pound the chicken or pork to ½-inch thickness for even cooking. Season both sides with salt and pepper.
  2. Set Up the Breading Station: Place flour in one bowl, beaten eggs in a second, and panko breadcrumbs in a third.
  3. Bread the Cutlets: Coat each cutlet in flour, then dip it into the beaten egg, and finally coat it with the panko breadcrumbs, pressing gently to adhere.
  4. Heat the Oil: In a frying pan, heat oil over medium-high heat until hot but not smoking.
  5. Fry the Cutlets: Cook the chicken for 3-4 minutes on each side or the pork for 2-3 minutes on each side, until golden brown and cooked through.
  6. Make the Sauce (if desired): If making homemade tonkatsu sauce, mix ketchup, Worcestershire sauce, soy sauce, and sugar in a small bowl.
  7. Assemble the Bowls: Start with a base of rice, layer on sliced cutlets, drizzle with tonkatsu sauce, and garnish as desired.

Notes

For extra crunch, add a tablespoon of cornstarch to the flour. Avoid overcrowding the pan when frying and keep cooked cutlets warm in an oven if necessary.
