2 cups leftover cooked chicken or turkey, shredded
1 cup frozen mixed vegetables
1 cup chicken broth
1 can cream of chicken soup
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
2 cups mashed potatoes
1 cup shredded cheese (optional)
Instructions
Preheat your oven to 375°F (190°C) to get it ready for baking.
Combine the shredded chicken or turkey with the frozen mixed vegetables, chicken broth, cream of chicken soup, garlic powder, onion powder, salt, and pepper in a large bowl. Mix everything well until combined.
Pour the mixture into the bottom of a baking dish, spreading it evenly to form a solid base.
Top the chicken mixture with an even layer of mashed potatoes. Smooth it out with a spatula for even cooking.
Sprinkle shredded cheese over the top for an extra layer of flavor and a golden finish, if desired.
