A comforting and delicious way to use up excess chicken or turkey, packed with flavors and textures.

Ingredients

  • 2 cups leftover cooked chicken or turkey, shredded
  • 1 cup frozen mixed vegetables
  • 1 cup chicken broth
  • 1 can cream of chicken soup
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 cups mashed potatoes
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) to get it ready for baking.
  2. Combine the shredded chicken or turkey with the frozen mixed vegetables, chicken broth, cream of chicken soup, garlic powder, onion powder, salt, and pepper in a large bowl. Mix everything well until combined.
  3. Pour the mixture into the bottom of a baking dish, spreading it evenly to form a solid base.
  4. Top the chicken mixture with an even layer of mashed potatoes. Smooth it out with a spatula for even cooking.
  5. Sprinkle shredded cheese over the top for an extra layer of flavor and a golden finish, if desired.
  6. Bake for 25-30 minutes, or until heated through and the top is golden brown.
  7. Let it cool for a few minutes before serving.

Notes

For the best flavor, use homemade chicken broth and season your mashed potatoes with butter and cream.
