A comforting bowl of Lemon Chicken Orzo Soup with tender chicken, wholesome vegetables, and orzo pasta simmered in flavorful broth. Perfect for weeknight dinners.

Ingredients

  • 1 cup orzo pasta
  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups spinach
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Sauté the vegetables: In a large pot, heat olive oil over medium heat. Add chopped onions, carrots, and celery, and sauté until tender, about 5-7 minutes.
  2. Add garlic: Stir in minced garlic and cook for another minute until fragrant.
  3. Bring to a boil: Add chicken broth to the pot and bring to a boil over high heat.
  4. Cook the orzo: Once boiling, add orzo and cook according to package instructions, usually about 7-9 minutes.
  5. Stir in chicken and spinach: Lower the heat, stir in the shredded chicken and spinach, and cook until spinach is wilted, about 2-3 minutes.
  6. Season and serve: Add lemon juice, and season with salt and pepper to taste. Serve hot, garnished with fresh parsley.

Notes

Feel free to use rotisserie chicken to save time, and opt for any leafy greens if you don’t have spinach.
