A delightful and straightforward dish featuring juicy chicken seasoned with lemon and fresh herbs, perfect for family meals or gatherings.

Ingredients

  • 1 whole chicken (about 4-5 lbs)
  • 2 lemons, juiced
  • 3 tablespoons olive oil
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 4 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. Place the whole chicken breast-side down on a cutting board. Use kitchen shears to cut along each side of the backbone, removing it entirely.
  3. In a bowl, combine the lemon juice, olive oil, chopped rosemary, chopped thyme, minced garlic, salt, and pepper. Stir until well mixed.
  4. Turn the chicken over so the breast side is facing up. Rub the marinade all over the chicken.
  5. Place the marinated chicken skin-side up on a baking sheet lined with parchment paper.
  6. Roast the chicken for about 45-50 minutes, until the internal temperature reaches 165°F (75°C).
  7. Allow the chicken to rest for 10 minutes before carving and serving.

Notes

Use fresh herbs for the best flavor. For deeper flavor, consider marinating the chicken for a couple of hours before cooking.
