Delightful loaded mashed potato bites that are crispy on the outside and creamy on the inside, perfect for sharing.

Ingredients

  • 2 cups mashed potatoes (homemade or store-bought)
  • 1 cup shredded cheese (cheddar or your favorite)
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup green onions, chopped
  • 1/4 cup sour cream
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup breadcrumbs

Instructions

  1. Prepare the Mixture: In a large bowl, combine 2 cups of mashed potatoes, 1 cup of shredded cheese, 1/2 cup of crumbled bacon, 1/4 cup of chopped green onions, and 1/4 cup of sour cream. Add 1/2 teaspoon of garlic powder, and sprinkle salt and pepper to taste. Mix well until all ingredients are fully combined.
  2. Form the Bites: Using your hands, scoop out about a tablespoon of the potato mixture and shape it into small balls or patties. Place them on a baking sheet lined with parchment paper.
  3. Coat with Breadcrumbs: In a shallow dish, add 1 cup of breadcrumbs. Roll each potato bite in the breadcrumbs until fully coated.
  4. Preheat the Oven: While you are coating the potato bites, preheat your oven to 400°F (200°C).
  5. Bake the Bites: Once the oven is preheated, place the baking sheet with the potato bites in the oven. Bake for 20-25 minutes, or until they are golden brown and crispy on the outside.
  6. Serve Warm: Once done, remove the bites from the oven and let them cool for a few minutes. Serve warm with your favorite dipping sauce.

Notes

Use cold mashed potatoes for easier shaping. Don’t overmix the ingredients to keep the texture fluffy.
