A delightful and hearty casserole that combines tender chicken, zesty tomatoes, and savory spices, perfect for families or gatherings.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups cooked rice
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream
  • Tortilla chips (for topping)
  • Fresh cilantro (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) to ensure it’s nice and hot when your casserole goes in.
  2. Mix the shredded chicken, black beans, corn, diced tomatoes, taco seasoning, and cooked rice in a large mixing bowl. Use a spatula to mix everything well until combined.
  3. Incorporate the sour cream until the mixture is evenly blended and creamy.
  4. Prepare the baking dish by spreading the chicken mixture evenly into a greased 9×13 inch baking dish.
  5. Add shredded cheese on top, then layer tortilla chips for extra crunch.
  6. Bake for 25-30 minutes, or until heated through and the cheese is bubbly and slightly golden.
  7. Garnish with fresh cilantro before serving.
