Ingredients

  • 2 medium potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1 cup shredded cheese
  • Crushed tortilla chips or Fritos for topping

Instructions

  1. Preheat the Oven: Set your oven to 425°F (220°C) to get it nice and hot for roasting the potatoes.
