A delightful twist on classic tacos, combining crispy roasted potatoes with seasoned taco meat and fresh toppings for a satisfying meal.

Ingredients

  • 4 cups diced potatoes (Yukon Gold or russet)
  • 1 lb ground beef (or turkey/plant-based option)
  • 1 package taco seasoning
  • 1 ripe avocado, diced
  • 1 cup salsa
  • 1/2 cup sour cream (or Greek yogurt)
  • Fresh toppings: shredded lettuce, grated cheese, chopped cilantro

Instructions

  1. Preheat your oven to 425°F (220°C). Toss diced potatoes in olive oil, salt, and pepper, then spread them out on a baking sheet. Roast for 25-30 minutes until golden and crispy, flipping halfway through.
  2. In a skillet over medium heat, add ground beef and cook until browned, breaking it apart. Drain excess fat, stir in taco seasoning, and simmer until thickened.
