Crispy and delicious Baked Chicken Taquitos are easy to make and perfect for any occasion, from weeknight dinners to game day snacks.

Ingredients

  • 2 cups cooked, shredded chicken
  • 1 cup grated cheese (Monterey Jack or Mexican blend)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons salsa (mild or medium) or diced green chiles
  • 10-12 (6-inch) corn tortillas
  • 1-2 tablespoons olive oil (for brushing)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Prepare the filling by combining shredded chicken, cheese, cumin, chili powder, garlic powder, onion powder, salt, black pepper, and salsa in a bowl. Stir until mixed.
  3. Warm the tortillas in a microwave for 30-45 seconds or in a skillet for 15-20 seconds on each side.
  4. Assemble the taquitos by placing 1-2 tablespoons of the filling on one edge of a tortilla and rolling it tightly, seam-side down on the baking sheet.
  5. Brush the taquitos with olive oil and bake for 18-25 minutes until golden brown and crispy, flipping halfway through.
  6. Serve immediately with your choice of dipping sauces like guacamole or salsa.

Notes

For a vegetarian version, substitute half the chicken with sautéed vegetables. Keep the tortillas warm under a towel while assembling.
