A comforting and flavorful soup combining tender chicken, fresh vegetables, and creamy goodness—perfect for busy weeknights or cozy weekends.

Ingredients

  • 2 chicken breasts
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Sauté the aromatics: In a large pot, heat a drizzle of oil over medium heat. Add the diced onion and garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
  2. Brown the chicken: Add the chicken breasts to the pot, browning them on both sides for about 3-4 minutes.
  3. Add broth and vegetables: Pour in the chicken broth, then add the sliced carrots and chopped celery. Bring the mixture to a boil.
  4. Simmer for flavor: Reduce the heat, cover the pot, and let it simmer for 20-25 minutes or until the chicken is cooked through, reaching an internal temperature of 165°F (75°C).
  5. Shred the chicken: Remove the chicken from the pot. Once it’s cool enough to handle, shred it using two forks and return the shredded meat to the pot.
  6. Stir in cream and seasoning: Pour in the heavy cream and stir in the Italian seasoning. Season with salt and pepper to taste.
  7. Final simmer: Allow the soup to simmer for an additional 5 minutes to meld the flavors.
  8. Serve: Ladle the soup into bowls and garnish with fresh parsley before serving hot.

Notes
