A comforting one-pot meal that combines tender chicken, savory cheese, and nutritious broccoli, perfect for busy weeknights.

Ingredients

  • 1 tablespoon olive oil
  • 2 cups chicken, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup rice (white or brown)
  • 3 cups chicken broth
  • 1 cup milk
  • 2 cups broccoli florets
  • 1 cup cheddar cheese, shredded
  • ½ cup Parmesan cheese, grated

Instructions

  1. Sauté the chicken: In a large pot, heat olive oil over medium heat. Add the diced chicken and season with garlic powder, onion powder, paprika, salt, and pepper. Cook until browned, about 7 minutes. Remove and set aside.
  2. Prepare the rice: In the same pot, combine rice, chicken broth, and milk. Bring to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes, stirring occasionally.
  3. Add the broccoli: Stir in broccoli florets, cover the pot, and cook for an additional 5 minutes until tender.
  4. Combine with cheese and chicken: Return chicken to the pot. Add cheddar and Parmesan cheese. Stir until melted and creamy. Serve warm.

Notes

Use milder spices for kids, ensure chicken is fully cooked, and don’t overcook the broccoli. Adjust liquid for brown rice accordingly.
