Ingredients
4 boneless, skinless chicken breasts
1 cup long-grain rice
2 cups chicken broth
1 lemon (juiced and zested)
2 tablespoons olive oil
1 teaspoon dried thyme
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
Fresh herbs (such as parsley or basil) for garnish
Instructions
Heat the oil: In a large pot, heat 2 tablespoons of olive oil over medium heat until shimmering.
Season the chicken: Generously season 4 boneless, skinless chicken breasts with salt, pepper, garlic powder, onion powder, and thyme.
Sear the chicken: Add the seasoned chicken to the pot. Sear for about 5-7 minutes on each side, until golden brown, then remove from the pot and set aside.
Toast the rice: In the same pot, add 1 cup of long-grain rice. Stir for about 1 minute, allowing the rice to toast slightly.
Add liquids and flavor: Pour in 2 cups of chicken broth, along with the juice and zest of 1 lemon. Stir well to combine.
Simmer with chicken: Place the seared chicken back in the pot. Cover, reduce heat to low, and cook for about 20 minutes, or until the rice is tender and the chicken is cooked through.
Fluff and serve: Once done, fluff the rice with a fork, garnish with fresh herbs, and serve hot.
Notes
Use fresh, high-quality chicken and broth for the best flavor. Add veggies for extra nutrition and adjust herbs to taste.
