Ingredients
2 cups cooked chicken, shredded
1 can cream of chicken soup
1 can cream of mushroom soup
1 cup sour cream
1 cup shredded cheddar cheese (divided into two halves)
Salt and pepper to taste
1 cup crushed crackers (or breadcrumbs)
1/4 cup butter, melted
Instructions
Preheat your oven to 350°F (175°C).
Mix together the shredded chicken, cream of chicken soup, cream of mushroom soup, sour cream, and 1/2 cup of the cheddar cheese in a large bowl. Season with salt and pepper to taste.
Pour the mixture into a greased baking dish, spreading it evenly.
Combine the crushed crackers and melted butter in a separate bowl. Stir until well mixed.
Sprinkle the cracker mixture evenly over the chicken mixture in the baking dish.
Top with the remaining cheddar cheese, ensuring even coverage.
Bake in the preheated oven for 30-40 minutes, or until the casserole is bubbly and the top is golden brown.
Allow the casserole to cool for a few minutes before serving.
Notes
Use rotisserie chicken for even easier preparation. Mix in vegetables like frozen peas or corn for added nutrition.
