A delightful and comforting one-pot meal combining creamy coconut milk with the warmth of red curry paste, pumpkin, and fresh vegetables.

Ingredients

  • 1 lb chicken breast, diced
  • 2 cups mixed vegetables (e.g., bell peppers, carrots, broccoli)
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 cup pumpkin puree
  • 1 can coconut milk
  • 2 tbsp red curry paste
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Sauté olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, cooking until the onion becomes translucent and fragrant, about 3-4 minutes.
